Ajlouke De Carottes
Carrot and potato appetiser Ajlouke de carottes is an appetizer from Tunisia. It is easy to make and has a beautiful spicy flavour. It is served in Tunisian homes, cold with bread.
Serves 6 - 750g (1.5 lb) carrots
- 500g (1 lb) potatoes
- a teaspoon of salt
- 2 cloves of garlic, chopped
- 4 teaspoons ground cumin seeds
- 3 tablespoons of olive oil
- 2 tablespoons of wine vinegar
- a large pinch of cayenne pepper
Peel the carrots and potatoes and cut them into chunks. Put them in a saucepan with the salt and garlic. Cover with cold water and bring to the boil. Simmer until the vegetables are soft. Drain and mash the vegetables and stir in the remaining ingredients. Garnish with a little parsley if liked and serve with crusty bread or pitta chips as a Mediterranean appetizer. If you want to serve more than one appetizer, then try the radish salad, slatit fzill, as it goes well with this one. Sometimes I also serve this recipe warm, as part of a main meal, with a piece of grilled meat or fish. Not authentic but still very moreish!
