Adzuki Beans and Kale are a great source of vitamins and minerals. A true anti aging super food, it's highly nutritious and works well as part of a stirfry.
Kale And Adzuki Beans Recipe
225ml uncooked Adzuki Beans
1 tablespoon Olive Oil
2 cloves Garlic, peeled and crushed
1.5kg roughly chopped Kale
2 tablespoons Water
55ml of Tamari or Dark Soy Sauce
1 teaspoon ground Cumin
1 teaspoon ground Coriander
Salt and Pepper to taste
Place the Adzuki beans in a medium saucepan of water and bring to the boil. Simmer the beans for 30 to 45 minutes until they are tender.
Heat a pan and add the Olive Oil at a medium heat. Add the Garlic and saute for about 1 minute. Mix in the Kale to the Garlic and add 2 tablespoons of water.
Season the Adzuki beans with the Tamari/Soy sauce, Cumin and Coriander. Add the Kale and reduce the heat to low. Cover the pan and simmer for another 20 minutes or until the Kale is tender.
